The long awaited arrival of late spring sunshine has at long last come although we have had to wait until June (the beginning of Summer!). The flowers on the vines are coming too and the extra warmth is a real blessing to the vine growers. The Sauvignon Blanc flowers always come first and usually 10 days to two weeks later we see those of the Pinot Noir. The flowers are small and insignificant looking but without the flowers there will be no fruit. Later we need both warmth and sunshine to ensure there is adequate sugar content within the juice of the grapes. In this northerly vineyard we manage to achieve a high acidity level along with the sugar. This is the key to the success of this appellation an excellent balance between acitity and sugar combined with our unique minerality.
