11/03/2012 - Winter Pruning

Pruning is the longest task in the vineyards. It begins shortly after harvest in October and can continue throughout the winter and on into April the following Spring. This year there have been very cold spells down to -14 degrees Centigrade. But the pruning continues despite the cold conditions. It is back-breaking work and must be done by hand, chosing stem to tie in and cutting back the rest. This limits next years growth and determines which is the fruiting cane.
